What is Atchara:
Atchara, often spelled atsara or achara, is a popular pickled condiment prepared from unripe, green papaya in the Philippines. It was influenced initially by Indian pickles, achar, which arrived via Malay influence, acar (another type of pickled condiment from Malaysia, Indonesia, and Brunei).
Atchara, in contrast to these other varieties of pickles, uses green, unripe papaya as its major component and has a sugar-sweetened brine. Atchara is frequently consumed with a variety of Filipino dishes such sinangag and tocino for breakfast as well as chicken inasal, lechon belly, and pig barbecue skewers. But truly, whether it’s roasted or fried, it pairs well with any fatty, salty meat.
